Choosing local products is not a matter of bias or chauvinism; it simply has everything to do with the passion and conviction that Quebec producers are exceptional and worthy of a place in culinary creation, despite an often higher cost. It is of course a choice to marry Unibroue traditional beer to local products throughout our cuisine, but it is a choice that first and foremost reflects our identity and respect for our rich heritage.
